The two best sauces for brazzilian finger fried food

 The recipes

Rosê sauce is ketchup and mayonnaise. Easy like this just put in a cup and stir and use right away. The problem of the rosê sauce that you may find in stores is that they are made with mustard in the place of the mayonnaise.

Tartar sauce is mayonnaise stirred with pickles very chopped to become very small pieces like the size of garlic, what will make better is the kind of pickles that you use, maybe the one from small cumcumbers be the best.

And one use that I liked when I went to school, have a street food that was french fries with rosê sauce and grated cura cheese (parmesian is a kind of cura cheese just is very cured and is one very acid that make its characteristic flavour), the cured cheese is very good also to make cheese bread is kind a upper quality cheese bread, just I would use one less cured than parmesian unless be one that are that expensive imported ones that have a special smell when you grated, so perfumed when grated and less acid expensive but a party of flavour. The way to serve is put the sauce in a small ball and the person dip the finger food on it before eat it.
