Also the acid citric is to preserve the vitamins and the colour of the fruits, fruit with oxygen with the time and oxidate and get dark, you don't gonna use water with salt in fruits, I also know because my mother used fruit, have some cakes that have fruits that aren't jam, but others process with less sugar.

Ps.: Is like rust have iron in the fruit in form of molecular and mineral so you ate minerals with the vitamins but the mineral oxidate like the iron rust, the fruit gets dark, put in low doses of acid citric, it does make a little more acid the fruit, the food isn't a very long-lasting but till have the vitamins. Could even put a little of sweetness but not very much because is liked my mother used to say is for the kids to recognize the fruit flavour, and sugar to sweetness could make cavities for a food that the intention is serving a food that is natural.
