Imagine that in the past of the confectionary of my city nobody would got all the contracts for a marriage, or gonna be the cake with glacê marble or the truffles with glacê or the quindim. Sometimes all the money doesn't make you succeed, if you live in a hell, my mother once sai that the problem of be baketeer owner of buffet is that everybody is gorgeous and the person is a bicho in the days more important of the year, exhausted and ugly, Christmas, New Year, Easter, the person had time to do a very decorated and artistic cake and the truffles with glacê a quindim, and some frosted pies... maybe some would be even new but made by days... a kitchen that are at all full steam ahead, is a hot environment and all that heat influences in the quality of the food that is already prepared, when the quality get down the durability drops a lot, all the suffer that you pass for food that are of confectionary influences in his quality. Where this kind of food is sale the sweet is under cold environment and salt in hot machine that keeps his temperature. So the normal was hide 3 cake ladies to do that... But today the people are business people that hide workers to do that, or how could manage accomplish that type of contract. Gonna always to have workers to help. But the size of the kitchen with more 3 workers, even the kitchen gonna have to be remodelled to be bigger.
